Becca's Banana Bread: The Best Banana Ever!

With all the deals I keep seeing people getting on bananas all the time, and knowing that we always seem to have excess bananas that I don't even know what to do with, I felt that it was time to do another recipe... Sadly, this time, I don't have a Picture of mine, but here is a beautiful picture of someone else' Banana Bread to wet the appetite!

Well this recipe, I am proud to say, is my own! It is the result of experimenting with dozens of banana bread recipes all squashed together and tweaked until it was just perfect! If you want to share it, feel free to... just give me credit if you can't stop eating it! :)

Here it is:

Becca’s Banana Bread

1 ¾ cup Flour

¼ teaspoon Baking Soda

2 teaspoons Baking Powder

½ teaspoon Salt

½ teaspoon Nutmeg

½ teaspoon Cinnamon

1/3 cup Butter, softened (can substitute shortening, DO NOT USE MARGARINE)

1/3 cup Granulated Sugar

1/3 cup Brown Sugar

2 Eggs

3 Bananas (about 1 ½ cups mashed)

½ teaspoon Vanilla

In large mixing bowl, combine all dry ingredients and mix well, (flour, soda, baking powder, salt, nutmeg and cinnamon.) Set aside.

Cream together butter and sugars, then add eggs, and vanilla and beat well.

Mash bananas, and combine them with butter and egg mixture. Stir or beat until well blended.

Pour Banana mixture into flour mixture and stir until smooth.

TURN on oven to 350 degrees (DO NOT PRE-HEAT)

POUR mixture into a well-greased bread pan.

BAKE for 45 minutes to 1 hour (until an inserted toothpick comes back out clean.)

YIELD: 1 loaf
